Ingredients
  

Hummus
  • 2 Sweet potatoes medium size
  • 1 can Chickpeas drained and rinsed
  • 0.25 cup Tahini
Toppings
  • 4 oz Feta Cheese crumbled
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice freshly squeezed
  • 1 teaspoon Cumin ground
  • 0.5 teaspoon Smoked paprika
  • to taste Salt
  • to taste Pepper
  • 0.5 cup Nuts (walnuts or almonds) toasted
  • as needed Vegetables (for serving) carrots, cucumbers, bell peppers

Method
 

  1. Roast sweet potatoes until caramelized and tender.
  2. Blend roasted sweet potatoes with chickpeas, tahini, lemon juice, and spices until smooth.
  3. Arrange hummus on a platter.
  4. Garnish with feta cheese, toasted nuts, and vegetables.

Notes

For a smoother hummus, peel the sweet potatoes after roasting. Toast the nuts for enhanced flavor.
