- Preheat oven to 375°F (190°C).
- Mix peaches with 1/2 cup sugar, vanilla, cinnamon, and lemon juice. Set aside.
- Combine flour, remaining sugar, baking powder, and salt. Add milk and melted butter; stir until just combined.
- Pour batter into a greased 9x13 inch dish. Spoon peach mixture over batter.
- Bake for 40-45 minutes until golden and bubbly. Cool slightly before serving.
