Ingredients
  

Protein
  • 1 pound boneless, skinless chicken breasts
Broth & Vegetables
  • 4 cups chicken broth
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf bay leaf
  • to taste Salt and pepper
  • 1 cup frozen peas
  • 2 cups egg noodles (optional)

Method
 

  1. Place chicken breasts in slow cooker with broth, vegetables, herbs, salt, and pepper.
  2. Cook on low for 6-8 hours or high for 3-4 hours.
  3. Remove chicken, shred, and return to the cooker.
  4. Add noodles and peas, cook for 15-30 minutes until tender.
  5. Remove bay leaf, serve hot. Enjoy!

You can add more vegetables or adjust seasonings to taste.
