Ingredients
  

Meat
  • 2 pounds beef chuck, cut into 1-inch cubes
Vegetables
  • 4 carrots carrots, sliced
  • 3 potatoes potatoes, diced
  • 1 onion onion, chopped
  • 3 cloves garlic, minced
Broth and Seasonings
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 2 tablespoons vegetable oil

Method
 

  1. Heat oil and brown beef cubes in a skillet.
  2. Transfer beef to slow cooker, add vegetables.
  3. Mix broth, tomato paste, thyme, rosemary, salt, and pepper; pour over ingredients.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  5. Stir and adjust seasoning before serving.

Notes

For extra flavor, add fresh herbs or a splash of red wine during cooking.
