Ingredients
  

Salad
  • 6 cups chopped romaine lettuce
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, chopped
  • 0.5 cup red onion, thinly sliced
  • 1 avocado, diced
  • 0.5 cup crumbled cotija cheese (or feta)
  • 0.25 cup chopped cilantro
  • Santa Fe Salad Dressing (store-bought or homemade - see notes)

Method
 

  1. In a large bowl, combine the romaine lettuce, black beans, corn, red bell pepper, and red onion.
  2. Add the diced avocado, cotija cheese, and cilantro.
  3. Pour Santa Fe Salad Dressing over the salad and toss gently to combine.
  4. Serve immediately.

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing or include some chopped jalapeño in the salad.
