Ingredients
  

Salad
  • 2 cups raw chickpeas soaked overnight and sprouted for 1-2 days
  • 1 red bell pepper finely chopped
  • 1 cucumber peeled, seeded, and finely chopped
  • 1/2 red onion finely chopped
  • 1/2 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
Dressing
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon tahini
  • 1 clove garlic minced
  • 1/2 teaspoon cumin
  • to taste Salt and pepper

Method
 

  1. Rinse the sprouted chickpeas thoroughly.
  2. Combine chickpeas, bell pepper, cucumber, onion, parsley, and mint in a bowl.
  3. Whisk lemon juice, olive oil, tahini, garlic, cumin, salt, and pepper in a small bowl.
  4. Pour dressing over salad and toss gently.
  5. Adjust seasoning to taste.
  6. Serve immediately or chill.
