- Prepare the Falafel Mix
- Process chickpeas, onion, garlic, herbs, and spices until coarse crumbs form.
- Add baking powder and flour; pulse until combined. Refrigerate for 30 minutes.
- Shape and Fry the Falafel
- Form falafel balls or patties. Fry in oil until golden and crispy.
- Transfer to paper towels to drain excess oil.
- Prepare the Sauces
- Whisk tahini, lemon juice, garlic, and salt, adding water to thin.
- Combine yogurt, olive oil, lemon juice, mint, and salt.
- Assemble the Wraps
- Warm flatbreads. Spread sauce, add veggies, falafel, and pickled turnips (optional).
- Fold the wrap tightly.
- Serving and Customization
- Serve immediately. Customize fillings as desired.
