Method
- Spray slow cooker with nonstick spray or drizzle olive oil. Layer chicken breasts at the bottom.
- Add diced tomatoes, onion, garlic, and both olives on top of chicken.
- Sprinkle with salt, pepper, oregano, basil, and red pepper flakes. Drizzle with olive oil.
- Cover and cook on low 6–7 hours or high 3–4 hours, until chicken is tender.
- Add lemon juice and parsley before serving.
Notes
Serve over rice, couscous, or quinoa for a complete meal.
