  • 2 lbs boneless, skinless chicken breasts
  • 14.5 oz diced tomatoes with juice
  • 0.5 cup Kalamata olives, halved
  • 0.5 cup green olives, sliced
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp crushed red pepper flakes (optional) optional
  • 1 lemon lemon, juiced
  • 0.25 cup fresh parsley, chopped

Method
 

  1. Spray slow cooker with nonstick spray or drizzle olive oil. Layer chicken breasts at the bottom.
  2. Add diced tomatoes, onion, garlic, and both olives on top of chicken.
  3. Sprinkle with salt, pepper, oregano, basil, and red pepper flakes. Drizzle with olive oil.
  4. Cover and cook on low 6–7 hours or high 3–4 hours, until chicken is tender.
  5. Add lemon juice and parsley before serving.

Notes

Serve over rice, couscous, or quinoa for a complete meal.
