  • 1/2 cup Extra Virgin Olive Oil Good quality for best flavor
  • 1/4 cup Fresh Lemon Juice From about 1-2 lemons
  • 1 tablespoon Dijon Mustard
  • 2 teaspoons Honey Or maple syrup for a vegan option
  • 1 clove Garlic finely minced
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black Pepper freshly ground, or to taste

Method
 

  1. Combine all ingredients in a jar or bowl.
  2. Shake or whisk until emulsified.
  3. Taste and adjust seasoning. Serve or store.

Notes

For a smoother vinaigrette, use a blender or immersion blender.
