- Combine lemon juice, honey, Dijon mustard, garlic, salt, and pepper in a bowl or jar.
- Slowly drizzle in olive oil while whisking until emulsified.
- Taste and adjust seasoning with honey or lemon juice.
- Store in an airtight jar in the refrigerator for up to 7 days. Shake before use.
Notes
For a smoother dressing, use a blender or immersion blender to emulsify the ingredients.
