Greek Style Loaded Hummus

Ingredients
  

Base
  • 2 cups hummus store bought or homemade
Toppings
  • 0.25 cup kalamata olives pitted and chopped optional
  • 1.5 cups cherry tomatoes sliced in half or quartered if large
  • 0.5 cup sliced cucumbers approx 4 mini ones
  • 0.25 cup red onion or shallot peeled and thinly sliced
  • 2-3 pepperonicini peppers thinly sliced
  • 1 Clove Garlic peeled and minced
  • 0.5 Teaspoon oregano
  • to taste Salt and pepper
  • 0.25 cup Olive oil
  • 1 to 2 tablespoons finely chopped herbs or a mix of parsley, mint, and chives, plus more for garnish
Garnish
  • for sprinkling Sumac or Paprika
  • for serving Toasted Pine nuts optional
  • for serving Lemon slices/wedges

Method
 

  1. Toss the veggies, olives, onion and garlic with the oregano and olive oil. Season well with salt and pepper. Toss in the fresh herbs.
  2. Spread the hummus onto a serving platter and top with the veggie mixture and garnish with extra herbs, sprinkle with pine nuts if using and sumac or paprika.

Notes

Feel free to customize the toppings based on your preferences and what's in season. Serve with pita bread, crackers, or fresh vegetables for dipping.
