  • 1 pound large sea scallops patted dry
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1/4 cup dry white grape juice optional
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • to taste Salt and pepper

Method
 

  1. Season the scallops with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add scallops in a single layer, sear 2-3 minutes per side, until golden brown.
  4. Remove the scallops from the skillet and set aside.
  5. Reduce heat to medium. Add butter and garlic, cook for 1 minute, until fragrant.
  6. If using, add white grape juice and cook for 1-2 minutes, until slightly reduced.
  7. Stir in the lemon juice and parsley.
  8. Return the scallops to the skillet and toss to coat with the sauce.
  9. Serve immediately.

Notes

Be sure to pat the scallops dry before searing to ensure a good sear.
