  • 1 pound pasta (rotini, penne, or farfalle)
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup bell pepper (any color) diced
  • 1/4 cup black olives sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup Italian dressing
  • to taste Salt and pepper

Method
 

  1. Cook pasta, drain, and rinse.
  2. Combine pasta, tomatoes, cucumber, onion, bell pepper, and olives in a bowl.
  3. Whisk dressing, salt, and pepper.
  4. Pour dressing over pasta and toss.
  5. Stir in parsley.
  6. Refrigerate for 30 minutes.

Notes

Add grilled chicken or chickpeas for extra protein.
