Ingredients
  

Salad
  • 2 cups rigatoni pasta
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
Lemon Vinaigrette
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Boil salted water.
  2. Cook pasta according to package directions.
  3. Drain and rinse pasta with cold water.
  4. Set pasta aside in a large bowl.
  5. Crumble feta cheese and set aside.
  6. Add cranberries to the bowl with pasta.
  7. Add chopped red onion to the bowl.
  8. Sprinkle parsley over the pasta mixture.
  9. Whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
  10. Pour vinaigrette over pasta and toss gently.
  11. Adjust seasoning if needed.
  12. Serve immediately or refrigerate for 30 minutes.

For a vegetarian option, ensure the feta cheese is made with vegetable rennet.
