- Combine chickpeas, parsley, cilantro, garlic, cumin, coriander, cayenne, flour, olive oil, salt, and pepper in a food processor.
- Process until finely ground but slightly coarse. Do not over-process.
- Form into small patties.
- Heat a lightly oiled skillet over medium heat.
- Cook patties for 3-4 minutes per side, until golden brown.
- Warm tortillas.
- Spread hummus on each tortilla.
- Add lettuce, tomatoes, and cucumbers.
- Place 3-4 falafel patties on top.
- Drizzle with tahini sauce, if desired.
- Wrap tightly and serve immediately.

For a gluten-free option, ensure you use chickpea flour and gluten-free tortillas.
