Method
- Combine falafel ingredients in a food processor and process until finely ground.

- Spread hummus on each tortilla.
- Add lettuce, tomatoes, and cucumbers.
- Place falafel patties on top of the vegetables.
- Drizzle with tahini sauce, if desired.
- Wrap tightly and serve immediately.

For a gluten-free option, use gluten-free tortillas and chickpea flour.
