Ingredients
  

  • 1 package mini chocolate chip cookies
  • 1 pint vanilla ice cream
  • 1/2 cup red sprinkles
  • 1/2 cup blue sprinkles
  • 1/2 cup mini marshmallows
  • 4th of July themed paper plates for serving

Method
 

  1. Scoop out small portions of vanilla ice cream using a cookie scoop or spoon and place them on half of the mini chocolate chip cookies.
  2. Top each ice cream scoop with another mini chocolate chip cookie to create a sandwich.
  3. Roll the edges of each sandwich in red sprinkles, blue sprinkles, or mini marshmallows to add festive color and fun.
  4. Place the assembled mini ice cream sandwiches on a baking sheet lined with parchment paper.
  5. Freeze the sandwiches for about 1-2 hours to firm up the ice cream.
  6. Once frozen, serve the mini ice cream sandwiches on 4th of July themed paper plates for an extra festive touch.
