- Process chickpeas, parsley, cilantro, garlic, onion, lemon juice, cumin, coriander, and cayenne pepper until a coarse mixture forms.
- Add flour, salt, and pepper. Process briefly until just combined. Do not overmix.
- Form the mixture into small patties (about 1-2 inches in diameter).
- Cook falafel patties in a lightly oiled skillet for 5-7 minutes per side, or bake at 375°F (190°C) for 20-25 minutes, flipping halfway through.
- Prepare the yogurt sauce: Combine vegan yogurt, lemon juice, minced garlic, and chopped cucumber. Mix well.
- Warm the tortillas or pita bread.
- Assemble the wraps: Spread yogurt sauce, add lettuce, tomatoes, cucumbers, and falafel patties.
- Fold or roll up the wraps and serve immediately.
Notes
For a gluten-free option, use chickpea flour instead of all-purpose flour. You can also add other vegetables like bell peppers or spinach to the falafel mixture.
