Falafel Ingredients
  • 1 can chickpeas drained and rinsed
  • 1/2 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 2 cloves garlic minced
  • 1/4 cup onion chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper optional
  • 1/4 cup all-purpose flour or chickpea flour

Wrap Ingredients
  • 4 large tortillas or pita bread
Yogurt Sauce Ingredients
  • 1 cup vegan yogurt plain, unsweetened
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1/4 cup cucumber chopped
Toppings
  • Shredded lettuce
  • Diced tomatoes
  • Sliced cucumbers

Method
 

  1. Process chickpeas, parsley, cilantro, garlic, onion, lemon juice, cumin, coriander, and cayenne pepper until a coarse mixture forms.
  2. Add flour, salt, and pepper. Process briefly until just combined. Do not overmix.
  3. Form the mixture into small patties (about 1-2 inches in diameter).
  4. Cook falafel patties in a lightly oiled skillet for 5-7 minutes per side, or bake at 375°F (190°C) for 20-25 minutes, flipping halfway through.
  5. Prepare the yogurt sauce: Combine vegan yogurt, lemon juice, minced garlic, and chopped cucumber. Mix well.
  6. Warm the tortillas or pita bread.
  7. Assemble the wraps: Spread yogurt sauce, add lettuce, tomatoes, cucumbers, and falafel patties.
  8. Fold or roll up the wraps and serve immediately.

Notes

For a gluten-free option, use chickpea flour instead of all-purpose flour. You can also add other vegetables like bell peppers or spinach to the falafel mixture.
