Ingredients
  

Meat
  • 1 kg beef chuck, cut into chunks
  • 2 pieces onions, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized piece ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (400g) coconut milk
  • 400 g chopped tomatoes
  • 2 pieces carrots, sliced
  • 2 red bell peppers chopped
Seasoning
  • to taste Salt and pepper
Garnish
  • for serving Fresh coriander

Method
 

  1. Add beef, onions, garlic, and ginger to slow cooker.
  2. Mix in curry powder, cumin, and coriander to coat beef.
  3. Pour in coconut milk and chopped tomatoes, then add carrots and peppers.
  4. Season with salt and pepper, then cook on low for 6-8 hours or high for 4-5 hours.
  5. Adjust seasoning, garnish with coriander, and serve with rice or naan.

Notes

For extra flavor, add a splash of lime juice before serving.
