  • 1 head garlic
  • 2 tablespoons olive oil plus more for drizzling
  • 1 (15-ounce) can cannellini beans rinsed and drained
  • 1 (15-ounce) can chickpeas rinsed and drained
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 tablespoons chopped fresh rosemary
  • 1/4 cup water plus more as needed
  • Salt and freshly ground black pepper to taste
  • Pita bread, vegetables, or crackers for serving

Method
 

  1. Preheat oven to 400°F (200°C). Cut top off garlic, drizzle with oil, wrap in foil, and roast for 45-60 minutes.
  2. Squeeze roasted garlic into a food processor. Add beans, chickpeas, tahini, lemon juice, rosemary, and water.
  3. Process until smooth, adding more water if needed.
  4. Season with salt and pepper to taste.
  5. Transfer to a bowl. Drizzle with olive oil and garnish with rosemary, if desired.
  6. Serve with pita bread, vegetables, or crackers.

Notes

Roasting the garlic brings out a sweetness that complements the other ingredients beautifully. Don't skip this step!
