  • 15 ounce chickpeas drained and rinsed
  • 1/4 cup tahini
  • 1/4 cup lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 2 tablespoons olive oil plus more for drizzling
  • 1/4 teaspoon ground cumin
  • to taste salt
  • 2-4 tablespoons cold water or more as needed for desired consistency
  • Optional paprika garnishes
  • Optional chopped parsley garnishes
  • Optional whole chickpeas garnishes

Method
 

  1. Combine chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and salt in a food processor.
  2. Process until smooth, scraping down the sides as needed.
  3. Slowly add cold water, 1 tablespoon at a time, until the hummus reaches your desired consistency. Process longer and add more water for creamier hummus.
  4. Taste and adjust seasonings as needed. Add more lemon juice for tanginess, salt for flavor, or cumin for earthiness.
  5. Transfer hummus to a serving bowl. Drizzle with olive oil and garnish with paprika, chopped parsley, and/or whole chickpeas, if desired.
  6. Serve with pita bread, vegetables, or crackers.

Notes

For a smoother hummus, peel the skins off the chickpeas before blending.
