Ingredients
  

Salad Ingredients
  • 1 can chickpeas drained and rinsed
  • 1 avocado pitted and diced
  • 4 ounces feta cheese crumbled
  • 1/2 cup red onion thinly sliced
  • 1/2 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

  1. Combine chickpeas, avocado, feta, red onion, parsley, and mint in a bowl.
  2. Whisk together olive oil, lemon juice, garlic, and oregano. Season with salt and pepper.
  3. Pour dressing over salad and toss gently.
  4. Serve immediately or chill.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing.
