Salad Ingredients
  • 1 can black beans drained and rinsed
  • 1 can corn drained (or 2 cups fresh or frozen corn)
  • 1 medium red bell pepper diced
  • 1 medium cucumber diced
  • 1 small red onion finely chopped
Dressing
  • 1/4 cup fresh cilantro chopped (or parsley for an alternative)
  • 2 limes Juice of (or 1/4 cup lemon juice for a twist)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. Rinse black beans and corn under cold water and drain well.
  2. Dice red bell pepper, cucumber, and red onion into bite-sized pieces.
  3. In a large bowl, mix black beans, corn, diced bell pepper, cucumber, and red onion.
  4. In a small bowl, whisk lime juice, olive oil, cumin, salt, and pepper.
  5. Pour dressing over salad, add cilantro, and toss to coat.
  6. Taste and adjust seasoning. Serve immediately or chill.

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing.
