  • 400 g spaghetti
Vegetables
  • 300 g zucchini, sliced
Cheese
  • 100 g grated Parmigiano-Reggiano cheese
  • 50 g provolone cheese, grated
Oils & Aromatics
  • 4 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
Seasonings
  • to taste Salt
  • to taste Black pepper
Garnish
  • for garnish Fresh basil leaves

Method
 

  1. Cook spaghetti in salted boiling water until al dente, then drain, reserving some pasta water.
  2. Heat olive oil in a skillet, sauté garlic until fragrant, then add zucchini and cook until tender.
  3. Add cooked spaghetti to the skillet, then stir in reserved pasta water, cheeses, salt, and pepper to create a creamy sauce.
  4. Mix well, garnish with basil leaves, and serve immediately.

Notes

Use fresh basil for the best flavor and adjust seasoning to taste.
