Ingredients
  

Salad
  • 5 ounces arugula
  • 1/4 cup shaved Parmesan cheese
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. In a large bowl, combine the arugula and Parmesan cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately.

Notes

Add some toasted pine nuts for extra flavor and crunch.
